Amy Deahl-Greenlaw, RD/LDN
Amy Deahl-Greenlaw is a Registered Dietitian/ Licensed Dietitian Nutritionist. She is a Program Manager for The Food Trust, a non-profit agency dedicated to ensuring access to affordable, nutritious food for everyone. A graduate from Penn State University with a BS in Nutrition and Medical Dietetics, Amy also completed a one-year dietetic internship at a veterans' hospital in East Orange , NJ . Her professional experience includes working as a nutritionist in two WIC programs (Women, Infants and Children Supplemental Feeding Program), advising senior citizens and youth on nutrition in hospital-based settings, and working with the Philadelphia School District as a nutrition educator. She's also been involved with a Dietary Intervention Study that looked at how diet changes affect cholesterol levels in preadolescent children with elevated cholesterols.While staying at home to raise her family, Amy discovered her love for fitness. She became an ACE (American Council on Exercise) certified group fitness instructor and currently teaches step aerobics at her local YMCA. Her children have been and continue to be some of her best teachers in basic nutrition. Amy's oldest son is a college sophomore living in an apartment. Her newest mission is teaching him how to shop, cook and eat tasty, nutritious meals that are easy to prepare—all on a college budget!
Larry M. Fortunato, Culinary Arts Instructor
Larry Fortunato has been a culinary arts instructor at Pottstown High School for the last two years. He has the ServSafe food safety certification and is certified by the National Restaurant Association as a ServSafe instructor. He holds a Bachelor's degree in Hospitality Management from East Stroudsburg University, Vocational II Certifcation from Temple University and a M.Ed. in computers in Education K-12 from De Sales University. He is a member of both the American Culinary Federation and the Greater Lehigh Valley Professional Chefs Association with more than 25 years of food service experience. During the past four summers, he has been the Food Service Director for the Lehigh Valley Velodrome handling catering an doncessions.
Jo-an Rechtin, Food Writer & Cooking Instructor
Jo-an Rechtin is a local food writer and cooking instructor. She is a restaurant-trained chef who began her professional career as a training coordinator for a large restaurant chain. She later went on to combine her chef skills with her degree in marketing: consulting to restaurants and food stores, engineering menus, developing recipes, writing training materials, and training chefs.
Jo-an feels very connected to the challenges of feeding a family. She confesses there have been days spent creating or writing about wonderful foods for the public, only to come home at dinnertime to a hungry family and stare into an empty refrigerator--tummies gurgling around her. This motivated her to develop and teach a sell-out course on Cooking Meals Ahead--Dinnertime Magic for the Time-Starved Cook.
Dedicated for more than 15 years to helping families eat well, Jo-an advocates for Local Foods and Farms and School Nutrition. She has been developing recipes for more than 25 years. Jo-an is the Wellness Coordinator for the Owen J. Roberts School District, and is working on a cookbook on transitioning to a healthier, more natural diet. She is also a guest-host food expert on QVC.
